TENDER COCONUT ICE CREAM





There's some leftover tender coconut my dieting husband left in my fridge and some leftover whipped cream from my little boys birthday cake I baked last week.
I am a frequent homebaker. So there's always a pack of frozen whipping cream in my freezer. I often choose a Coconut Cream based whipping cream over Dairy based. Need I say why???.... ain't no flavor under skin than that of coconut for this Pao !!!









INGREDIENTS:
1 cup sweet Whipped cream of coconut
1/4 cup Sugar  
1/2 cup Milk
2 Tender Coconut Flesh









METHOD:


In a saucepan, place Milk with Sugar and keep on fire. Stirring continously until the milk is condensed. Take off heat and set aside to cool.









You could also use a readymade Can of condensed milk. I choose not to as they tend to be too sweet for my palette. Not to forget, I am already using a sweetened whipped cream to make this icecream.

Cut bits of 1/4 of Tender coconut and set aside
Put the remaining coconut flesh of 2 Tender Coconuts and condensed milk into the grinder for a fine paste. Next, add the sweetened whipped cream and just pulse only few times OR until all is combined well.
Now mix in the tiny bits of tender coconut into the cream with a spoon, pour into a container with lid and Freeze. A good 6 hours should be enough for your ice cream to set.
Ready to serve.
