To be honest, I dislike this vegetable. My mother has always cooked Lady Fingers/Okra in a mixture of Kokum & Onion. SLIMY as hell! But I ate up as I liked the tangyness of Kokum and crunchy onion.
Today however I'm baking my "Bhende" for crispy
200gms Okra(washed and wiped dry)
1tbs Vegetable oil
1tsp Cajun spice mix(OR your masala of choice)
1tbs Bread crumbs
2 Sandwich Cheese slice
Salt as per taste
METHOD:
Preheat Oven to 200C. Cut off the stem and tip of the already cleaned Okra and slit them lengthwise. Drizzle oil onto them skin-side-up and use your fingers to coat & rub everyone of them in oil. Now I'm using Cajun Spice mix to sprinkle onto my Okra but you can also use Garam masala, leftover instant noodle sachet of seasoning, or even Goan Raechado Masala.
Toss the spice to coat the Okra evenly. Arrange these Okra cut-side-up onto your baking tray closely and sprinkle breadcrumbs over them. My Cajun Spice mix includes it's own salt so I sprinkled just a pinch more of salt on top of the spread Okra...
Now cut strips of cheese and arrange along your Okra 'boats'. Sprinkle some more breadcrumbs & spice on top. Bake for 5-10mins or until Okras are golden brown with cheese melted & seeped into them.
Remove from oven and serve hot.
