This used to be a quick fix teatime snack. It was mainly important for my "Shamai" to wake us all up from our afternoon siestas without stepping anywhere near to our beddings or even calling out our names. The aroma of Cardamom infused hot Polle simply made getting out of bed that easy for.
I for one, would eat the center's of Polle first, as the burnt circumference were tastier to eat. Save the best for last!
INGREDIENTS:
1/2 Cup freshly grated Coconut
2 eggs
2 Cardamom Pods
1 Cup Wheat flour(Gonva peet)
1/4 Cup Dark Palm Jaggery(Mada God)
1 tbs Vegetable oil
METHOD:
Remove seeds from Cardamom pods and crush to powder. Add this to a mixing bowl. Beat eggs, Palm Jaggery and grated coconut in the mixing bowl. Now add the wheat flour. You might have to get your hands in there to break up those lumps and get a smooth batter.
TIP: Palm Jaggery often has tiny rock-like granules. I bash it in a zip pouch with a kitchen hammer and pour a tablespoon of hot water in the zippouch to get a smooth concoction that is strained through a sieve.
Keep a frying pan on medium heat spread out a teaspoon of oil to get hot enough to fry a ladle of batter dropped to get a circular pancake. When you see bubbles appearing through the pancake, it's time to flip it(approx 2min per side). Make more Polle similarly.
Serve hot with a cup of tea.
