It was "Saibinn" at my home today. I decided to make parcels of food made in my own kitchen. Something wholesome, something filling and yet lite for supper. My husband decided to go against my wish of ordering dinner rolls from a caterer. Instead, he kindly approached our local "Poder" and requested for 3 dozen mini-Paos. What better way to promote my local Bread man..plus, our 'Saibinn' meal could not get more classic.
INGREDIENTS :
Boil the Macaroni in 3 cups of water for 10mins. Strain. Retain the starchy macaroni water. Toss the par-boiled Macaroni in a teaspoon of vegetable oil so they don't stick together.
I prefer boiling Macaroni simultaneously while I put pork to cook as I can directly add hot Macaroni to my finished dish.
Add Starchy water as required to the pork mixture as it should be slightly soggy so that upon addition of par-boiled strained Macaroni, the sogginess & flavors can be absorbed by Macaroni when the mixture is allowed to sit for 5mins with covered lid.
Your GoanPork stew is ready to eat hot with a Pao. I only had sliced bread in my fridge when I got a picture of my Pork Macaroni Stew😊 posted here.

INGREDIENTS :
500gms Pork meat
2 cups cubed carrots
2 cups peas
2 cups cubed potatoes
1 cup Macaroni (preferably Elbow Macaroni)
1" ginger
6 Cloves of garlic
2 Green chillies
8 Pepper Corns
6 Cloves
1 stick Cinnamom
2 green Cardamom pods
1/2 tsp Turmeric powder
2 tbs Toddy vinegar OR 1/2 rind lime juice
2 onions diced
2 onions diced
1 large Tomato diced
2 tbs Vegetable oil
Salt to taste

METHOD:
Paste ginger and garlic to marinate pork. Cut the pork into small cubes and marinate with 1tsp Ginger-garlic paste, 1tsp Salt, 2tbs toddy vinegar. Leave at room temperature for 30mins or until you prepare the other ingredients.
Place the carrots, peas and potatoes in a steamer to cook just ready to eat. About 5mins. Do not overdo steaming of veggies as they'll go back into cooking later. Set aside.
I choose not to boil all vegetables together for 2 reasons. Firstly as their colors stay the way they should by steaming all at once and secondly, I won't have to waste the nutrients in water used to boil veggies in.

In a large container, put vegetable oil to heat on low flame. Add Cinnamon stick, Peppercorns, Cloves and Cardamom to fry lightly before you add the diced onion. This spice aroma will already announce there's Goan Pork Stew cooking up in your kitchen. Fry Onion on low heat till golden & caramelized. Add Diced tomatoes, Green chillies and 1/2tsp Turmeric powder to frying. Fry till tomatoes mellowed down. Now add the marinated Pork to mix & fry on medium heat before you add a cup of water to simmer down with lid covered for about 15mins Or until Pork is well done and water has almost dried out.
Now add a ladle of that Starchy Macaroni water to the reduced pork and mix in the steamed vegetables. Add salt to taste.Add Starchy water as required to the pork mixture as it should be slightly soggy so that upon addition of par-boiled strained Macaroni, the sogginess & flavors can be absorbed by Macaroni when the mixture is allowed to sit for 5mins with covered lid.
