My late Aunt used to make these along with my Mom. She'd mainly roll the pancakes that my mother fried. Isn't it nice when you have someone to chitchat while sharing your work..?
She was gifted... I learnt my first dress makings from her(of course back then I made mine to fit my Barbie dolls well!!! ) Crocheting, Embroideries, Matty were all crafts I took on from her. The only place you'll now-a-days find women sit on their porch knitting... Is in photographs!!

Getting back to Alle Belle... Also known to me as 'Mankio'. Guessing they were called so because these resembled jiggly Squid(AKA 'Mankio' ) flesh. 🤔
INGREDIENTS :
Batter:
1 Cup water(160ml)
1 Egg
2 tbs Flour (heapfull)
1/4 tsp Salt
Ghee for frying
Stuffing
Type 1:
2 Cardamom pods
40gms Dark Jaggery(Mada God)
1 Cup Freshly grated Coconut
Stuffing
Type 2:
2 Cardamom Pods
40gms Cane Jaggery
1 Cup Freshly grated Coconut
1 ripe Banana
METHOD:
Beat all ingredients of pancake batter into a pouring jug. The consistency you are looking for is runny. Like full fat milk cream runny.
Keep your non-stick flat base pan(Crepe Pan) on medium fire. Lightly spread a drop of Ghee over the pan base and drop a ladle full of batter gently swirling your pan to get a pancake as circular as possible. You'll see bubbles through the pancake, it's then you carefully run a flat spatula to raise and flip pancake once. 1 min each side is sufficient.
Now gently take it off the pan and lay flat, crater side down onto a flat plate. Ready to roll immediately as these pancakes are jiggly and slightly sticky. Therefore I suggest you roll them off with stuffing as soon as they are off the pan.
This batter recipe will make 5 pancakes.
For stuffing type 1, powder down the seeds of Cardamom and add to a mixing bowl with grated coconut, softened Dark. Jaggery mix up all ingredients mentioned.
Spoon out some coconut mixture along a lengthy stretch and roll up! Chow down!
For stuffing type 2, powder down the seeds of Cardamom and add to a mixing bowl with grated coconut, softened white Jaggery. Mix up all ingredients well. Slit the banana twice along the length to get 4 pieces.
On a flat pancake, place a piece of banana on one end and spoon out some of the coconut mixture along the length of the banana. Now tightly roll up this pancake. Serve hot with tea.
TIP: Palm Jaggery often has tiny rock-like granules. I bash it in a zip pouch with a kitchen hammer and feel tough granules in between my fingers while softening the jaggery. Get rid of those unpleasant granules.
